Acorn Bread Recipe

If you followed my directions on how to make acorn flower, or just happen to have some acorn flour around, here is a simple recipe you can use it in.  I have just taken my cornbread recipe and substituted acorn flour for the cornmeal and added a bit more sugar.

The couple times I made this bread, it turned out a lot like zucchini bread both in texture and taste, I made it in a 10" cast iron skillet, but an 8x8 pan would work as well.


1 cup acorn flour
1 cup white flour
3/4 cup sugar
1/2 tsp salt
4 tsp baking powder
1 egg
1 cup milk
1/4 cup soft shortening

Sift acorn flour, white flour, sugar, salt and baking powder into bowl; add egg, milk and shortening.  Stir until just blended.  Pour into well seasoned cast iron skillet or a greased 8 inch square pan.  Bake for 20 to 25 minutes at 375 until it is golden brown.  Optional, as soon as you take it out of the oven, spread a thin layer of butter on the top.
